I have a sweet tooth for all chocolate and French snacks (and just food in general), and so it’s no surprise that I have been craving ganache truffles over the past few days. They’re easy to make, whilst also tasting insanely beautiful and suggesting a reminiscence of provincial life à la française – something I have been craving since being away from the country for over a year. A perfect sweet pick-me-up, I bring to you a gorgeous, simple French truffle recipe.
INGREDIENTS
- 300g dark chocolate
- 300ml heavy whipping cream
- 30g unsalted butter
- 50g cocoa powder
- 50g icing sugar
- 1tsp vanilla extract
- 1tsp orange extract (optional)
INSTRUCTIONS
- Break the chocolate into pieces, and leave in a heat-resistant bowl
- In a small saucepan, lightly simmer the cream until it begins to boil, and then pour into the bowl of chocolate
- Stir in the butter until you get a thick paste, adding the vanilla and orange extracts as it begins to form
- Refrigerate for two to three hours in a covered bowl
- When the chocolate forms a ganache consistency, use spoons to roll it into balls (the heat from your hands will melt them)
- Dust with coco powder or icing sugar – and bon appétit!
